Ingredients:
4 apples, peeled, cored,and chopped
3 Tablespoons butter
1 teaspoon cinnamo
1/2 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon allspice
Pinch of salt
1/4 cup water
2 Tablespoons packed brown sugar
1-1/2 cups heavy cream
3 Tablespoons powdered sugar
1 teaspoon vanilla extract
1-1/2 half cups broken meringues, snickerdoodles or graham crackers

1. Combine apples and butter in large skillet over medium heat; add spices, water and brown sugar and cook, stirring frequently, until mixture is syrupy and apples are as soft as you like them. Depending on the size of the apple pieces, this can take 20 to 25 minutes.
2. Remove from heat, cool completely.
3. With an electric mixer, whip the heavy cream to soft peaks. Add the powdered sugar and vanilla, and whip to firm peaks. Gently fold in cooled apple mixture (don’t worry about fully incorporating the apples - streaks are good) and broken cookies. Divide evenly among four bowls or glasses and serve.
