2 cups chopped seeded peeled cucumbers1/3 cup rice wine vinegar1-1/2 tablespoons sugar2 tablespoons finely chopped shallots1 tablespoon minced seeded jalapeno pepper (or any other hot pepper you like)1-1/2 tablespoons minced fresh cilantro
1. Combine and serve with your favorite chips, baguettes, or crackers!
